Although none of us at SGT Peterson’s like to think about the amount of calories you all may have consumed over the Thanksgiving weekend, we know the large majority went up for a second round of turkey, potatoes, stuffing, and of course, pumpkin pie. So now that the Holiday is over, you (hopefully) are thinking about getting back into your healthy eating habits. I thought I would help you all out by forwarding a recipe that one of my clients, Jill Erolin, passed on to me several weeks ago. It’s a cinnamon swirl protein bread that is delicious, healthy, and a great recipe for anyone who works out on a consistent basis (YOU). With that said, clear off your countertops, pre-heat your oven to 350, and get ready to bake!
Spray a loaf pan with non-stick spray
In a small bowl combine:
1/3 cup Ideal, Truvia or Splenda
2 tsp cinnamon
set aside
In a large bowl combine:
1 1/2 cups oat flour + 2 scoops vanilla whey protein
1 tbsp baking powder
1/2 tsp salt
1/2 cup Ideal, Truvia or Splenda
whisk together
In a medium bowl combine:
2 egg whites
1 cup unsweetened almond milk
1/3 cup of unsweeteened applesauce
whisk together and add to large bowl
Pour a shallow layer of batter into the loaf pan (about 1/4 of the batter). Sprinkle heavily with half of the cinnamon/sugar mixture. Repeat this process until all the batter and cinnamon/sugar mixture is used up. Bake for 45 to 50 minutes. Let cool for 10 minutes. Bread will be dense.
